Guajillo chiles (gwah-HEE-yoh) are mild to medium hot red chiles.  They run about 2500-5000 on the Scoville Heat Scale, and they are one of the ""Holy Trinity" chiles  that are used when making traditional, authentic mole ( Ancho and Pasilla Negro are the other two).  Guajillo chilis have a slightly sweet and tangy flavor with fruity undertones and a spicy finish.
