A 1-1/4 ounce package of Mexican Cinnamon, also known as Old Fashion Cinnamon, is the True Cinnamon Spice that has a subtle, woody flavor, which isn't as biting as cassia based cinnamon (the cinnamon at a regular grocery store). This is the softer, loose bark Ceylon variety that has a mild, but flavorful taste that is more subtle than traditional cinnamon. You can use it in molé, hot chocolate, tea, Cafe de Olla, horchata, as a flavor adder in soups and stews, in middle eastern dishes, in delicate pastries, or just about any dessert.
