1 1/2 ounce package of Mexican Cinnamon, also known as Old Fashion Cinnamon, or Ceylon Cinnamon, is the True Cinnamon Spice that has a subtle, woody flavor, which isn't as biting as cassia based cinnamon (the cinnamon at a regular grocery store).  This is the softer, loose bark Ceylon variety that has a mild, but flavorful taste that is more subtle than traditional cinnamon.  You can use it in molé, hot chocolate, tea, Cafe de Olla, horchata, in traditional Mexican soups and stews, in middle eastern dishes, in delicate pastries, or just about any dessert.
